I SEGRETI DI NONNA MADDALENA

LA TUSCIA IN CUCINA!!!

Le nonne sono le nonne. Oltre ad essere infinitamente pazienti, accomodanti e dolci, di solito hanno una qualità che le rende superiori a qualsiasi essere femminile esistente sulla Madre Terra.


SANNO CUCINARE. BENE. 
Ora, io ho una nonna di quelle che sanno cucinare, bene bene bene.
Certamente, se vivete tra l'Umbria, il Lazio e la Toscana conoscerete buona parte delle ricette che ho estorto a mia nonna. Si accettano consigli e correzioni sulle ricette che andrò a proporvi....ma ricordate...sono tutte sicuramente mischiate con l'ingrediente segreto di mia nonna...no non ve lo dico...se no che segreto è?

LOMBRICHELLI



Ingredienti:

Farina di grano tenero, sale e acqua, sugo piccante o altri sughi a piacere




Come si prepara:
Fare un impasto con acqua e farina di consistenza media, maneggiando a lungo per renderlo ben omogeneo. Quando si deve cuocere una maggiore quantità di pasta, per evitare che durante la cottura i lombrichelli si attacchino l'uno con l'altro, oggi si aggiunge un uovo per ogni chilo di farina. Ciò contrasta però con la tradizione che vorrebbe queste paste alimentari casalinghe fatte soltanto con acqua e farina. Prelevare da quest'impasto, uno per volta, dei pizzicotti di pasta, dai quali sulla spianatoia ricavare a mano degli spaghettoni leggermente fusiformi del diametro di 3-4 mm. e di lunghezza intorno ai 15-20 cm. Lasciarli asciugare per qualche ora prima di metterli a cuocere in una pentola con abbondante acqua salata. Il sugo più usato, anche nel passato, era quello detto "piccante". Si fa soffriggere l'aglio in olio d'oliva, poi si aggiunge mezzo chilo di pomodori passati e un pezzetto di peperoncino, e si lascia insaporire per un'oretta, a fuoco basso e tegame coperto, aggiungendo acqua calda, se necessario, anche durante la cottura. Quando i "lombrichelli" saranno cotti, condirli con questo sugo e con l'aggiunta abbondante di formaggio pecorino. Il sugo piccante, che è il più semplice, veniva usato in alternativa al cosiddetto "sugo finto", che è fatto con il classico battuto e l'aggiunta del pomodoro. In alternativa venivano usati anche sughi con le salsicce, con il guanciale, coi fiori di finocchio o coi funghi.

Lombrichelli


Ingredients:
Wheat flour, salt and water, hot sauce or other sauces to taste


How to prepare:
